The nose has apple crumble, toffee, stewed pears, old books, cinnamon, and hints of pot pourri. Simply wonderful! The mouthfeel is thin with no cling. Also not much hint of that abv until it hits the finish, when it somewhat explodes! The body has more toffee, floral notes, but less of the apples - more pears. The finish is sweet - apple, pear, toffees but with a hint of old dusty paper.

Water brings out thin, rapidly expanding whorling that settles quickly into brief mottling. The nose now has hints of rum, burnt toffee, stewed apples and more of the crumble notes. The body has become quite different - ginger, maple syrup, and hints of liquorice. The finish continues the hint of liquorice, with cinnamon and ginger.

Simply wonderful. It may seem like madness to take a sherry matured grain and finish it in virgin oak, but it works!
