9 years old, distilled 4th April 2007, 59.9% abv, First Fill Ex-Bourbon Barrel, 216 bottles

The nose has eucalyptus, apples and a hint of rosewater. The mouthfeel is thin with little cling, but quite smooth. The body has apples and pears, but then rapidly moves onto black pepper and ginger - not too hot, but a surprise based on the nose! The finish is short - mentholic with a hint of apples.

Water brings out thin, rapidly expanding whorling that settles quickly into lingering mottling. The nose now has hints of mint and cinnamon, and less eucalyptus and apple. The body has lost much of the spicey intensity - more apple, less black pepper. The finish is now less mentholic, gaining mango with the apples.
A wonderful dram with a little kick that makes it interesting, and delivers a good variety flavours. A real conversation starter.
