The nose is sweet - vanilla, liquorice, and a hint of lemon. The mouthfeel is very thin with no cling. The body is a little watery - lemon sweeties, icing sugar, and a little honey. The finish is a short burst of honey and liquorice, then a lingering lemon note.

Water brings out thick, compact mottling that lingers for a while as heavy mottling. The nose now gains mint, thyme, rosemary and hints of fennel. The body is similarly more herbal, with thyme and mint replacing the icing sugar. The finish is thyme, rosemary and lemon.

A superb dram for the colder evening.
